Ingredients for salad:
- Quinoa 1 cup
- Water/Stock 2 cups
- 1 can of black beans drained
- 1 red capsicum diced
- 1 cup cherry tomatoes halved
- ½ cup red onion, finely diced
- ½ cup fresh coriander chopped
- ½ cup corn kernels
- 1 avocado diced
Ingredients for Avocado lime dressing:
- 1 avocado
- Juice of 2 limes
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 teaspoon honey
- Salt and pepper
Method
- Cook the quinoa in the water/stock for 15 minutes, drain and then fluff with a fork
- Add all ingredients to a blender for the dressing and blend until smooth.
- Add all salad ingredients together, then pour over the dressing and toss to combine
- Serve with extra coriander and lime wedges
