Ingredients:
- 1 cup cooked Brown Rice
- 6 spring onions, chopped
- 1 Red or Green capsicum, chopped
- 1/3 cup currants
- 2 tbls toasted sunflower seeds (or Pepitas)
- 1/3 cup chopped parsley
- 6-8 tbls dressing
Dressing:
- 4 tbls soy sauce
- 1/3 cup sunflower oil (or other oil)
- 2 tbls lemon juice
- 1 clove garlic
- Salt and pepper to taste
Instructions:
- Cook brown rice according to package instructions and let cool
- Chop spring onions, capsicum, and parsley
- Toast sunflower seeds until lightly browned
- Whisk together dressing ingredients
- In a large bowl, mix together rice, vegetables, currants and seeds
- Pour desired amount of dressing over salad and toss to coat evenly
