Beef Burrito Bowl

Ingredients

  • 2 tsp olive oil
  • 200g lean beef mince
  • 2 tsp chipotle chilli sauce
  • ½ cup cherry tomatoes, halved
  • ¼ avocado, chopped
  • 1 tbs finely sliced red onion (optional)
  • 2 tbs sour cream
  • 1 cup coriander leaves
  • Lime wedges
  • Salt, pepper
  • Sliced red chilli to top (optional)

Method

  • Heat olive oil in a medium sized frypan. Add mince, season and cook until browned. Stir through chipotle sauce.
  • Spoon mince into serving bowl and top with tomato, avocado, red onion, sour cream and coriander leaves (and chilli if using).
  • Squeeze lime over the top and enjoy!

(Note: Feel free to substitute the beef mince for grilled chicken breast or sliced rump steak. These would also be well suited to this recipe).
