Ingredients
- 2 tsp olive oil
- 200g lean beef mince
- 2 tsp chipotle chilli sauce
- ½ cup cherry tomatoes, halved
- ¼ avocado, chopped
- 1 tbs finely sliced red onion (optional)
- 2 tbs sour cream
- 1 cup coriander leaves
- Lime wedges
- Salt, pepper
- Sliced red chilli to top (optional)
Method
- Heat olive oil in a medium sized frypan. Add mince, season and cook until browned. Stir through chipotle sauce.
- Spoon mince into serving bowl and top with tomato, avocado, red onion, sour cream and coriander leaves (and chilli if using).
- Squeeze lime over the top and enjoy!
(Note: Feel free to substitute the beef mince for grilled chicken breast or sliced rump steak. These would also be well suited to this recipe).
