Ingredients
- 1 tsp olive oil
- 400g lean pork mince
- 1 tsp finely chopped garlic
- 1 tsp grated ginger
- 4 spring onions, sliced
- ½ red capsicum, finely chopped
- ¼ cup zucchini, finely chopped
- 2 medium mushrooms, finely chopped
- 2 tbs soy sauce
- 4 large iceberg lettuce leaves
- Sliced red chilli to garnish (optional)
Method
- Heat olive oil in a medium sized frypan. Add mince, garlic and ginger and cook for 2 minutes, breaking up mince with a wooden spoon.
- Add spring onions, capsicum, zucchini and mushrooms and continue cooking until vegetables have softened and mince is cooked through.
- Add soy sauce and stir through. Remove from heat.
- Serve mince mixture in lettuce cups and garnish with more spring onion slices and chilli (optional).
