Ingredients
- 1 kg of mixed tomatoes (as many different sorts as you can find)
- 50g of marinated fetta
- ½ cup fresh basil leaves
- Olive oil
- Salt, pepper
- Balsamic vinegar reduction
Method
- Chop and slice tomatoes in various shapes and sizes and arrange on a large tray.
- Season with salt and pepper and drizzle with olive oil.
- Crumble fetta over the top and then sprinkle with basil leaves.
- Finally, drizzle with the balsamic reduction.
