Tomato Salad

Ingredients

  • 1 kg of mixed tomatoes (as many different sorts as you can find)
  • 50g of marinated fetta
  • ½ cup fresh basil leaves
  • Olive oil
  • Salt, pepper
  • Balsamic vinegar reduction

Method

  • Chop and slice tomatoes in various shapes and sizes and arrange on a large tray.
  • Season with salt and pepper and drizzle with olive oil.
  • Crumble fetta over the top and then sprinkle with basil leaves.
  • Finally, drizzle with the balsamic reduction.
