Savoury Muffins

Ingredients

  • 5 eggs, lightly beaten
  • ½ cup reduced fat milk
  • 75g mushrooms, chopped
  • 50g baby spinach
  • 2 tbs chives, chopped
  • ½ cup self-raising flour
  • 3 tbs grated tasty cheese
  • 5 cherry tomatoes, halved
  • Salt, pepper

Method

  • Preheat oven to 180 degrees celcius.
  • Combine eggs, milk, mushrooms, spinach, chives, flour and half of the tasty cheese in a large bowl, and season with salt and pepper.
  • Spoon mixture into a silicon muffin tray or muffin tin.
  • Top each muffin with half a cherry tomato and sprinkle with remaining cheese.
  • Cook for approximately 20 minutes until firm.
  • Serve warm or cold.

(Note: These are great to take for work lunches or snacks).
