Ingredients
- 5 eggs, lightly beaten
- ½ cup reduced fat milk
- 75g mushrooms, chopped
- 50g baby spinach
- 2 tbs chives, chopped
- ½ cup self-raising flour
- 3 tbs grated tasty cheese
- 5 cherry tomatoes, halved
- Salt, pepper
Method
- Preheat oven to 180 degrees celcius.
- Combine eggs, milk, mushrooms, spinach, chives, flour and half of the tasty cheese in a large bowl, and season with salt and pepper.
- Spoon mixture into a silicon muffin tray or muffin tin.
- Top each muffin with half a cherry tomato and sprinkle with remaining cheese.
- Cook for approximately 20 minutes until firm.
- Serve warm or cold.
(Note: These are great to take for work lunches or snacks).
